3 baking chocolate squares
1 1/4 tsp. baking powder
3 Cups flour
1 tsp baking soda
1 tsp salt
1 1/2 Cup oil
3 Cups grated zucchini
1 cup nuts, chopped
1 cup sugar
Preheat the oven to 350 degrees.
Using a double broiler melt chocolate squares over hot water. Let the chocolate cool.
Grease and flour a 10 inch tube pan.
Sift flour with baking powder, soda, and salt. Set aside.
In a large bowl, at a high speed, beat the eggs until they are thick and light. Gradually add sugar, 1/2 cup at a time; beat well after each addition.
Add the oil and the cooled chocolate; beat well until blended.
Using a low speed add the sifted dry ingredients. Add the zucchini and nuts.
Pour into the pan and bake 1 hour and 15 minutes.
