Ingredients- serves 6
4 Cucumber, peeled, halved lengthwise, seeded and sliced diagonally
1/4 Cup Fresh Lime juice
1 Tbl Olive Oil
2 Green Peppers, seeded and ribs discarded.
1 tsp grated lime rind
salt and pepper to taste
In a bowl, combine the cucumbers, lime juice, lime rind, oil, salt, and pepper to taste. This salad may be prepared up to this point one day in advance and kept covered and chilled.
Finely chop the green peppers and squeeze out the excess liquid. Just before serving, add the green peppers and toss the salad.
