Food is often part of our celebrations. We enjoy gathering around food and drink while we laugh and enjoy each other’s company. Grilling delicious foods is an activity that many men enjoy! On Father’s Day we invite you to try out some of these great recipes given to us by Chef Randall from Living Water as you look to celebrate the father’s that God has placed in your life. Enjoy trying something new and maybe that special father will enjoy using that new grilling accessory!

Easy Tender Grilled Pork Steak

Ready In:
Yields: 4 servings

INGREDIENTS:
1 (32 ounce) pork steak  (bone-in)
1 teaspoon seasoning salt, to taste (we used No Salt brand)
1 teaspoon garlic powder (to taste)
1 teaspoon onion powder (to taste)
1 teaspoon black pepper (to taste)

DIRECTIONS:
Season steak with all the seasonings.

Grill on each side for 2 minutes and then let sit to cook on the plate for 5-10 minutes, covered.

Creamy Grilled Potato Salad Recipe

Yields: 6 servings

INGREDIENTS:
8 medium red potatoes (about 2 pounds), cut into 1-in. slices
2 tablespoons olive oil
1/2 teaspoon garlic salt
1/4 teaspoon paprika
1/4 teaspoon pepper
1 cup fat-free mayonnaise
2 hard-cooked eggs, chopped
1 dill pickle spear, chopped
3 tablespoons dill pickle juice
1 tablespoon spicy brown mustard

DIRECTIONS:
Place the first five ingredients in a large bowl; toss to coat.
Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack. Grill potatoes, covered, over medium heat for 25-30 minutes or until tender, turning once. Cool. Cut into quarters and place in a large bowl.
In a small bowl, combine remaining ingredients. Pour over potatoes; toss to coat. Serve immediately. Refrigerate leftovers.

White Meat Rub

INGREDIENTS:
8 Tbsp kosher salt
8 Tbsp white sugar
8 Tbsp brown sugar
8 Tbsp ground cumin
4 Tbsp chili powder
4 Tbsp cayenne pepper
4 Tbsp black pepper
3 Tbsp sweet paprika

DIRECTIONS:
Combine ingredients and store in an air-tight container.
Use this dry rub 12 hours before meat preparation.  Rub into meat and wrap tightly with plastic.  Refrigerate.

Southwestern Bean Salad

Black beans, kidney beans, and cannellini beans combine with corn, bell pepper, and red onion in this easy and colorful salad. It’s tossed with a sensational dressing made with fresh lime juice, cilantro, and cumin.

Yields: 8 servings

INGREDIENTS:
1 (15 ounce) can black beans, rinsed and drained
1 (15 ounce) can kidney beans, drained
1 (15 ounce) can cannellini beans, drained and rinsed
1 orange bell pepper, chopped
1 red bell pepper, chopped
1 (10 ounce) package frozen corn kernels
1 red onion, chopped
1/2 cup olive oil
1/2 cup red wine vinegar
2 tablespoons fresh lime juice
1 tablespoon lemon juice
2 tablespoons white sugar
1 tablespoon salt
1 clove crushed garlic
1/4 cup chopped fresh cilantro
1/2 tablespoon ground cumin
1/2 tablespoon ground black pepper
1 dash hot pepper sauce
1/2 teaspoon chili powder

DIRECTIONS:
In a large bowl, combine beans, bell peppers, frozen corn, and red onion.
In a small bowl, whisk together olive oil, red wine vinegar, lime juice, lemon juice, sugar, salt, garlic, cilantro, cumin, and black pepper.  Season to taste with hot sauce and chili powder.
Pour olive oil dressing over vegetables; mix well.  Chill thoroughly, and serve cold.

Grilled Sweet Corn with Jalapeno Lime Butter

Yields: 6 servings

INGREDIENTS:
6 ears fresh sweet corn
4 oz (1 stick) butter
1 jalapeno,(size depending on spice preference),seeded
1 lime, juiced and zested
1 garlic clove
1 tsp sweet paprika

DIRECTIONS:
Grilling corn:
Heat grill.
Peel the husks back on the corn to remove silk and fold husk back over corn.
Place corn in ice water with 1 Tbsp of kosher salt and soak for ten minutes.
Grill for 15 minutes turning every 5 minutes.  Remove from grill when kernels are tender.
Butter:
Place ingredients, butter through paprika, in the bowl of a food processor and pulse until well blended.  Remove from bowl and place on wax paper, roll into roll and place in freezer until ready to serve.
