Large Zucchini
Meat Mixture- basically use a meatloaf recipe
1/2-1 lb Ground Meat
1 Chopped Onion
1 Beaten Egg
Catchup (optional)
Spices, Salt, and Pepper to taste


Wash the zucchini. Cut off the tip on the small end of the zucchini and scoop out all the seeds. Leave a hole for the meat mixture.

An alternate method: Cut the zucchini in half lengthwise and scoop out all the seeds. Lightly rub olive oil on the outer skin.

Mix together the meat mixture following a basic meatloaf recipe. Stuff the zucchini with the meat mixture. If using the alternate method, fill each half of the the zucchini with the meat mixture and return the two pieces back together.

Cover the dish tightly with foil. Bake at 400 degrees for 1 hour. Cut into thick slices and serve.
