Ingredients for Crust and Crisp
3 Cups flour
1- 1 1/2 Cup butter
1 1/2 Cup Sugar
1/2 tsp salt
Crumble together and reserve 1/2 Cup for the filling. Divide the remaining crust mix in half and lightly pat one half into a 9×13 pan. Bake this crust for 10 minutes at 350 degrees.
Ingredients for Filling
1 Large Zucchini, peeled, seeded, and sliced to resemble apple chunks
2/3 Cup lemon Juice
1 Cup brown sugar
1/4 tsp. nutmeg
1/2 tsp cinnamon
Cook zucchini slices in lemon juice until tender (about 8-10 minutes, covered). Remove from heat and add brown sugar, nutmeg, and cinnamon. Simmer 2 more minutes.
Add the 1/2 cup crust mixture that was set aside. Spread this filling over the crust that was baked.
Add another tablespoon cinnamon to the remaining crust mixture and sprinkle over filling.
Bake 30-35 minutes at 350 degrees.
